Ingredients:
Prepared salt cod or Brandade de Morue
2 red bell peppers
4 medium potatoes
1 clove garlic
rock salt or Fleur de Sel
olive oil
Salt Cod, or Brandade de Morue, comes prepared à la française in tins or in glass jars. It’s a ready-made combination of salt cod, crème fraîche, and herbs.
Split 2 red bell peppers in half and de-seed, keeping the stem attached for presentation. Lay the halves on parchment paper and sprinkle a dash of olive oil and rock salt, then roast in a very hot oven until peppers are slightly browned, and have gone soft.
Peel and boil 4 medium sized potatoes, then mash. Crush a clove of garlic very finely with salt and add to the mashed potatoes. Open jar of prepared salt cod and add to potato mixture.
Fill the roasted pepper-halves with the potato-salt cod mixture and bake once more for 20 minutes until the potato filling has browned slightly. Serve with salad greens.
